Someone who is omniscient cannot learn anything. You have a contradictory statement there.

Yes It does. You have to read the whole context. Although he was the son he did sin like any other high priest chosen by God among men. He cried, prayed and repented and feared God. He learned obedience thru his sufferings. God heard him, saved him from death and made him perfect.
Because you believe Jesus has 2 natures does not explain how he can be a mediator between God & humans if he is God. Having another nature has nothing to do with 1 individual mediating between other individuals. When Moses mediated between God & men. he spoke for God or he spoke for the men. As a mediator he never spoke for himself, otherwise the term mediator would not apply to him. Clark Kent cannot mediate between Superman and regular men if he is superman because that would be deceptive.
There are numerous verses that can attest to the sinless life of Jesus.
1 Peter 2:22 Who did no sin, neither was guile found in his mouth.
1 John 3:5 And you know that He was manifested to take away our sins, and in Him there is no sin.
2 Corinthians 5:21 For he hath made him to be sin for us, who knew not sin; that we might be made the righteousness of God in him.

Because Christ has both a human nature as well as a divine nature He is the perfect mediator between God and man. Of course He was excluded. He did not die for Himself or appease His own wrath. As God He could represent God to man and be the perfect prophet. As man He could be the perfect priest and represent man to God. He Himself was the perfect and ultimate sacrifice.
Jesus never sinned See–.Heb. 4:15. That text doesn’t suggest either. Jesus took on the flesh of man, therefore He must learn obedience to the will of the Father, and true obedience can only be tested if it involved suffering (Hbr. 5:8,9)–suffering doesn’t involve sin. What He knew by omniscience, He learned by experience, thus being made perfect”–not as God, but as man.
The term Mere should not be used when referring to angels. I agree tho that only Jesus could have died for all mankinds sins but you still did not give your reason for why only Jesus could have died for our sins. Furthermore Mediator by very definition excludes the ones being mediated between. If Yuri was a mediator between you and I, then he could not be you nor myself. Otherwise he could not rightly be called a mediator.

Hebrews 5:8 does NOT say Jesus was a sinner. You are eisegetically reading that foolishness into the text.
Do iI need to explain the propitiatory nature of the atonement to you? A mere angel could not have provided atonement for fallen mankind. Jesus could not have been a true mediator if He had been an angel either.
Jesus being sinless was not the only reason he was sent to the world. All of Jesus’ angelic brothers were sinless aswell afterall so why weren’t any of them sent?
Sanctify means exactly that. To give something holy status, that’s what happened to Jesus. He was made holy.

Jesus sin, suffered for that sin, learn obedience, repented and was made perfect (sinless).

Yes, and Jesus was SINLESS so obviously the context would demand that the Father set Him aside and sent Him into the world.

God cannot be made holy? So true! But sanctify does not mean make holy. Sanctify means to set apart and God the Father set apart God the Son and sent Him from Heaven into the world.
